2 oz Gin
1 oz Sparkling Water
½ oz Glossop’s Grapefruit Mint Syrup
2 Dashes Grapefruit Bitters
Stir Gin, Syrup and Bitters in a mixing glass with ice. Add Sparkling Water and give it a single stir to combine. Strain over ice into a highball. Garnish with a sprig of fresh mint.
